The Best Gluten Free Banana Bread

2 cups gluten free all purpose baking flour (I use Bob’s red mill)

1 tsp. baking soda

1/4 teaspoon salt

4 eggs

2 cups mashed ripe bananas (4-5)

1 cup sugar

1/2 cup unsweetened applesauce

1/3 cup canola oil (I use veggie)

1 tsp. vanilla

1/2 cup chopped walnuts (I use chocolate chips)

1.  Combine flour, baking soda and salt.  In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vinalla.  Stir into dry ingredients.

2. Transfer to two 8 by 4 loaf pans coated with cooking spray.  Sprinkle with walnuts.  (I mix the chocolate c hips in the batter).  Bake at 250 for 45-55 minutes or until a toothpick inserted near the center comes out clean.  Cool for ten minutes before removing from pans and cooling on racks.
